Paulo obtained his PhD in Applied Statistics at the Swiss federal institute of technology, in Lausanne (EPFL), under the supervision of Prof. Stephan Morgenthaler, and Dr. Per Ekstrom. During that time, they established the technological foundation that would lead the team to found REM Analytics, to bring novel measurement tools to the field of microbiome. In 2021, Paulo also joined the YONI Solutions team, to bring personalised probiotics to women’s health.

Talk Title: Practical regulatory guide for food production: Planning your project and implementing your QMS

Innovation in the food industry is not about science, discovery, tastes and production…most often, it is about regulation. Understanding the logic and principles behind these regulations (and where there are exceptions) is the key to building a successful product. In this course we will try to understand the basics, and how to use them to plan a new product, and the minimum quality management needed to bring it from idea to market. The key to navigating the food industry regulation, is understanding the chain of responsibilities. You must understand that everything starts from the packaging (not your product), since the label on the package is the legal contract that binds you and your customer. 

If you are clear on what your packaging promises, then you can implement a Quality Management System, that ensures you can back it up. One that makes sense for you, and still lets you sleep (some) nights.
