Eleni Kasapidou is an Associate Professor at the University of Western Macedonia’s School of Agricultural Sciences, where she focuses on agricultural product quality and meat science. She earned her PhD and MSc in Meat Science from the University of Bristol, UK, and holds a BSc in Food Technology from the Technological Educational Institute of Thessaloniki, Greece. Dr. Kasapidou’s research centers on improving food quality and safety through sustainable animal production practices. Her studies cover topics such as milk and meat quality, food antioxidants, plant – based food products and ways to enhance the nutritional profiles of animal-based products. Her work has appeared in several scientific journals, and she has also collaborated on European Union-funded projects related to animal nutrition and food quality. Alongside her research, Dr. Kasapidou contributes to curriculum development and postgraduate teaching within agricultural sciences, supporting students in their academic and professional growth.
Talk Title: The Impact of Food Processing on Microbial Quality and Safety – Emphasis on Novel Methods
New food processing technologies have emerged to meet consumer demands for safe, flavourful, and fresh products with extended shelf life. As lifestyles evolve, there is an increasing focus on foods that provide nutritional benefits and bioactive compounds, prompting innovation within the food processing industry. Methods such as High-Pressure Processing (HPP), Pulsed Electric Fields (PEF), irradiation, ultrasonication, and cold plasma have become significant advancements, helping to preserve food quality and lengthen shelf life. The growing preference for non-thermal processing methods emphasizes enhanced safety and quality, addressing health concerns and reducing consumer complaints. As these techniques become more popular, traditional thermal processing is expected to decline.
